It all started with a passion for not-so-traditional burgers and a lot of bourbon-infused brainstorming sessions. So we thought, “Let’s put the two together and see what happens.” An upscale burger & bourbon bar. Why not?

So in early 2010, we jumped at the opportunity to inhabit what was once the Southern Railway Baggage Building (c. 1867). With the menu complete and a charming space to work with, we started figuring out how to give this project the justice it deserved.

We decided to go for LEED Certification, and we ended up turning one of Chattanooga’s oldest buildings into one of the most environmentally friendly businesses in the city.

Friends over at The Strauss Company, River Street Architecture, and green|spaces helped us realize our dream.



We love our city and are proud to say we own and operate one of the most sustainable and environmentally friendly businesses in town. We grew up here and believe in supporting our community and being the best neighbor we can be.

This year, our team will volunteer over 120 hours for local organizations and we will donate over 3% of our profits back to local causes.

We believe that environmental responsibility for a restaurant starts with where we source our food and who our food suppliers are. All year long, our menu will feature locally sourced food ingredients that we work with local farms, food artisans and local food initiatives to incorporate into our menu items. These items will vary during different times of the year based on what is available to us. If something cannot be found locally, we make a huge effort to ensure that we are purchasing from a sustainable or humane source. This choice that we make for our patrons and ourselves will help cut back on the fuel and environmental impacts that are involved in national food sourcing logistics. As a matter of fact, a few of our food artisan friends live in the neighborhood and will actually just walk our order over to us each day.



A lot of small, simple steps add up to make a big difference. Spray-foam insulation, low-energy lights, Energy Star appliances, and high-efficiency AC provide a cozy environment without burning more fossil fuels than we need to. Besides adding patios to the structure, no new materials were used in our renovations. We collect rainwater in old whiskey barrels to keep our outdoor plants happy in the summer. Our restrooms are built around water-saving features—compared to the average commercial building of the same size, we use over 20,000 fewer gallons per year. Our booths, furniture, woodworking, bar cabinets, bathroom sinks, and all kinds of other pieces were fabricated by local craftsmen. Walk here, bike here, bus here—we’re in the heart of the city, so alternative transportation is the name of the game. And we recycle everything we can.

We’re proud to be the first LEED Certified restaurant in Chattanooga, using nearly half the amount of energy used by non-LEED restaurants. For more information check out our Leed Tour Brochure.
